Huainan tofu (or Bagong Mountain Tofu) has tofu for its main ingredient, and is famous for its fresh and delicious taste. It is an important part of Anhui cuisine and contributed a lot to the development of Anhui cuisine. Huainan is the hometown of tofu, and thus it has many different tofu dishes.
