Black rice is also called black sticky rice, and it can have either a sweet or salty flavor. To make such foods, the leaves of a kind of wild shrub called black rice bush, aka vaccinium bracteatum, is used to marinate glutinous rice and color it before the rice is presented and steamed in baskets over a fire.
