Longde's delight: warm pot and family traditions
Longde warm pot, a local delicacy in Longde county, Guyuan of Ningxia Hui autonomous region, is a symbol of family reunion, especially during festivals.
The ingredients in the pot are prepared in layers. At the bottom of the pot are radish slices and Chinese cabbage, and above them are meatballs, vermicelli, tofu, soybean sprouts and potato chunks. The third layer includes spare ribs, mushrooms, black fungus and bamboo shoots, and the final layer features thinly sliced fried meat.
Warm pot has become a specialty in Longde due to the lower temperatures throughout the year. Families gather around to share a pot; a tradition passed down from generation to generation.
The county released a standard for the dish, including instructions for purchasing raw materials, processing and cooking to better manage its quality throughout the industrial chain. It's also being promoted across the country.
