Harbin restaurant's kitchen equipment a crowd attraction
A noodle restaurant in Harbin, capital of Heilongjiang province, has attracted a large amount of customers due to its authentic Shanxi knife-cut noodles and knife skills available.
The 11-kilogram knife, used to cut the noodles, also made from brass and steel, almost replicates the knife used by Guan Yu, a famous general in the Three Kingdom period.
The store sells more than 300 bowls of noodles each day, with each dish made from scratch.
The process to make each batch of noodles includes the noodle-making specialist mixing about four kilograms of flour and water together, and then kneading it.
The employee then rolls the mixture flat with a roller after compacting it with a wooden pole.
The mixture then gets folded into a two-millimeter thick flour-like tortilla and cut with a scimitar.
"I come from Yuncheng, Shanxi province, the hometown of Guan Yu," said Yu Hongbo, the owner of the restaurant.
"In Shanxi, people believe vinegar is regarded as an elixir and the noodle is king.
"I hope I can bring the traditional food of Shanxi to Heilongjiang, and make people here know more about the culture of my hometown."
